The Marc Restaurant Recipe: Caramelized Onion and Cheddar Biscuits With Sweet Onion Molasses Jam

The appetizing aroma of caramelized onion and cheddar biscuits will draw family and guests into the kitchen. The molasses and sweet onion jam is both sweet and savory.

Servings: 3 dozen biscuits
Cook Time: 1 1/4 hours
Pair With: These warm cheddar biscuits will pair with many wines, a plummy Syrah is a good pairing.


Ingredients For the Biscuits:
1/4 cup baking powder
6.75 ounces sugar
36 ounces all-purpose flour
3/4 teaspoon salt
8 ounces cold, cubed butter
1 quart heavy cream
1 medium Walla Walla sweet onions, julienned and caramelized
3 cups cheddar cheese, shredded + extra for topping
1 egg mixed with a little water for an egg wash

Ingredients For the Sweet Onion Molasses Jam:
2 tablespoons olive oil
2 medium Walla Walla sweet onions, diced
1/2 cup cider vinegar
1/2 cup honey
12 cup molasses pinch salt and pepper

Directions For the Biscuits: Combine dry ingredients in mixing bowl with paddle attachment. Add cubed butter to dry ingredients, mixing until crumbly. Add half the amount of heavy cream to the dough initially, let mix on slow speed until just combined--over mixing will result in tough biscuits. Then add the onions and cheese and the remaining half of the heavy cream where the dry spots arise. Just mix until combined.

On a floured board, roll the dough into a rectangle about 1/2” thick and fold in half. Roll it back out to 1/2” thick and fold in half again. Roll out to desired thickness 1/2”-1” and cut into squares or circles. Brush with egg wash, sprinkle with cheddar cheese and bake at 350 degrees for 15 minutes, rotating halfway through.

Directions For the Jam: Heat oil in a saucepan over medium high heat. Add the onions and stir briefly to sweat. Add the remaining ingredients and simmer down until liquid is a thick syrup.
